Peter Vestinos is an award-winning, nationally recognized bartender and spirits professional with years of experience designing cocktail programs and training bartenders & sales teams. With over 20 years of experience in the bar and restaurant industry, he has worked at all levels of the business including behind the bar, distribution, and supplier.
In 2012 Vestinos launched the beverage consulting company, The BarMedic, The main focus of The BarMedic has been to implement successful bar systems to help establishments deliver creative, fresh ingredient drinks quickly and with consistency by well-trained bartenders.

Peter Vestinos has over 20 years of experience in the bar and restaurant industry. He has worked at all levels of the business including behind the bar, distribution, and supplier. He is a partner in the hugely successful Sparrow, a 1930’s Cuban-era rum bar in Chicago’s Gold Coast, and The Peregrine Club, a partnership with Urban Space Food Halls, where he has developed both beverage programs.
Vestinos pioneered the modern craft cocktail movement in Chicago with the opening of Michelin-starred Sepia in 2007. There he developed a fresh ingredient and seasonally inspired cocktail menu based on then-forgotten classics. A “game changer for the city’s beverage programs,” according to Modern Luxury magazine, Vestinos helped to firmly place Sepia and Chicago on the national cocktail map.
From Sepia, he was recruited by Wirtz Beverage Group (now Breakthru), one of the nation’s leading luxury and premium beverage alcohol wholesalers, in the role of beverage Development Director. He acted as a liaison between the supplier, distributor and trade industry, as well as contributing his expertise to cocktail and beverage programs, as well as trade and industry events.
In 2012 Vestinos launched the beverage consulting company, The BarMedic, to develop cocktail programs, train bartenders, assist with brand marketing and strategy. The main focus of The BarMedic has been to implement successful bar systems to help establishments deliver creative, fresh ingredient drinks quickly and with consistency by well-trained bartenders.
Vestinos is a multi-year a presenter at Tales of the Cocktail, Tales on Tour, Chicago Cocktail Summit, and The Roots Conference at Chef’s Garden. He is also a frequent taster with Beverage Tasting Institute / Tastings.com, which provides independent reviews of spirits, wines, and beer.
